Trevor Yorke explains that the dairy on the country estate could be particularly ornamental because the lady of the house might herself have superintended the production of milk and dairy products &mdash though this seems unlikely in the case of a separate dairy some distance from the main house. At any rate, this one looks neat and well-ventilated, and has its own simple storehouse or service area (for washing pans etc) adjacent to it (see Yorke 136-38).
